Make them big enough to keep you motivated, but also big enough that every week you can reward yourself for visible progress.
Don't start intense training right away
Given that it's been a while since you last trained, the worst thing you can do is choose an intense workout that will burn your muscles, and then you'll have to take a break again. Keep your workouts short and moderate - you'll get back in shape quickly anyway.

We believe that you already know very well how easy it is to fall into a fitness routine, and you probably also know how bad it is to copy others. If everyone around you on Instagram is doing pilates, it doesn't mean that this type of exercise will suit you. Try different workouts and see what works best for you.
