A recipe for a creamy treat that doesn't require an oven.
ingredients:
(for basis)
– 150 g of nuts (optional), soaked in water for at least eight hours
– 150 g of dates
– 5 tablespoons of coconut flour
– 1 pinch of salt
(for cream)
– 3 ripe avocados
– 250 g of coconut yogurt
– 50 ml of honey
– 1 1/2 spoons of coconut oil
– 60 ml of freshly squeezed lime juice
- grated peel of 1 lime
<strong>Preparation: </strong>
Grease the cake pan with coconut oil.
For the base, coarsely chop the soaked walnuts. Add the dates, coconut flour and salt, then mix until everything is well combined and the mixture becomes thick, reports N1.
Firmly press the mixture into the cake tin with your hands. Set aside.
Place the avocado and coconut yogurt in a blender or food processor and blend until smooth.
Add honey, coconut oil, juice and lime zest and mix until the mixture becomes creamy.
Pour the mixture on the base and put the cake in the freezer to set for about an hour or two.
Remove the cake from the freezer 15 to 20 minutes before serving.
