The sweet potato is native to Central and South America, and here it is somewhat unfairly neglected. Everything will be clear to you if you try the recipe for sweet potato stuffed with chicken and herbs.
ingredients:
- 3 washed sweet potatoes
- 1 tablespoon of olive oil
- 2 chicken breast fillets
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 55 ml of olive oil
- 1 tablespoon of lime juice
- 4 chopped garlic cloves
- 1 chopped hot pepper
- 1 teaspoon of basil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 60 g of spinach
- 235 g of cheddar cheese
- 2 tablespoons of chopped parsley
<strong>Preparation: </strong>
Preheat the oven to 175°C. Prick the sweet potato with a fork and place it on a tray lined with baking paper. Bake for about an hour.
Place the chicken on a baking sheet and coat with a little olive oil, salt and pepper. Place in the oven with potatoes and bake for 30 minutes. When it cools down, cut it into smaller pieces.
When the sweet potatoes are cooked, cut them in half and let them cool.
Mix olive oil, lime juice, garlic, paprika, basil, cumin, chili powder, salt and pepper. Set aside.
Chop the spinach and mix with the chicken. Scoop out the inside of the sweet potato with a spoon and mix with the chicken and spinach.
Add the olive oil and garlic mixture to the chicken and spinach. Mix everything well.
Heat the oven to 200°C.
Fill sweet potatoes with the mixture, sprinkle with cheese and bake for 10 minutes. Sprinkle with parsley, serve and enjoy.
