A light meal that looks a bit like sataras with eggs, but it's not, and it looks a bit like various similar dishes, but it's special because it's very simple.
ingredients:
- onion head
- 3 or 4 tomatoes
- 2 eggs
- so
- 2 tablespoons olive oil
- fresh chives (parsley or any herb you like)
<strong>Preparation: </strong>
Sauté the finely chopped onion in olive oil. While the onion is stewing, peel the tomato (it is best to take a ripe tomato) and chop it into small cubes.
Add tomatoes to stew and salt to taste. Simmer for ten minutes, stirring regularly. At the end, add the eggs and mix. Allow a few minutes for the eggs to be cooked to your liking.
Remove from the heat and chop chives or parsley on top.
