Ingredients
For the pancakes:
- 2 eggs
- 30 g of crystal sugar
- 1 bag of bourbon vanilla sugar
- 1 pinch of salt
- 180 g of sharp flour
- 20 g cocoa powder
- 2 tablespoons of oil
- 300 ml of milk
- 200 ml of hot water
For the cream:
- 15 g (1,5 sachets) powdered gelatin
- 100 ml of water
- 700 g of sour cream or cream cheese
- 1 bag of bourbon vanilla sugar
- 150 g of powdered sugar
Fruit ingredients:
- 300 g peaches from compote
- 200 g pitted cherries (can be from the freezer)
For the frosting:
- 100 g of cooking chocolate
- 15 g butter
- 3 tablespoons of water
Preparation
Beat the pancakes. Beat the eggs with the sugar and vanilla sugar until foamy, add the salt, sifted flour and cocoa, oil, then gradually add the milk, and finally the hot water, then let it rest for 20 minutes and bake the pancakes. This amount of ingredients makes 14 pancakes.
Preparing the cream: Soak 15 g of gelatin in 100 ml of cold water and leave to swell for five minutes. Mix the cream with sugar and vanilla sugar, finally add the melted gelatin and whisk.
Preparing the fruit: Thaw the cherries at room temperature if they are from the freezer and strain the juice. Chop the peaches from the compote into cubes.
Assemble the cake as follows:: Line a 20 cm diameter cake tin with foil. Place the first pancake on the bottom of the tin, then spread five or six tablespoons of cream over it, then place one pancake in each smaller container, fill with about a tablespoon and a half of cream and fruit, and form small bundles. Arrange the bundles in the prepared tin so that the bundles stand vertically. Now, distribute the rest of the fruit and cream on top of the bags. Don't worry if the cake looks unsightly when you put it in the fridge overnight. Once you put the icing on and decorate it, it will look even prettier.
Finally, close the cake with 2 pancakes, hiding the edges inward as much as possible. Cover everything with foil and leave in the refrigerator overnight. For the glaze, melt 100 g of chocolate with 15 g of butter and three tablespoons of water and pour the prepared glaze over the cake. Decorate as desired.
