When you need a light, fruity dessert that looks and smells like a real summer postcard - baked peaches with vanilla ice cream are the perfect choice.
The preparation is simple, and the result is creamy, juicy and irresistible.
Ingredients for one serving:
- 1 ripe, firm peach
- Olive oil
- A pinch of salt
- Brown sugar
- 1/2 teaspoon of cinnamon
- 1/2 teaspoon butter
- 1/2 teaspoon of vanilla extract
- 1 spoon of sugar
- Vanilla ice cream (for serving)
<strong>Preparation: </strong>
- 1. Preheat the oven to 175°C and line a small ovenproof dish with baking paper.
- 2. Cut the peach in half and remove the pit.
- 3. Brush it with olive oil, add a pinch of salt and a little cinnamon. Place it in the oven (cut side down) and bake for 10 minutes.
- 4. Meanwhile, mix the butter, white sugar, remaining cinnamon and vanilla extract into a paste
- 5. Remove the peaches, turn them over and place the butter paste in the hollow. Bake for another 10–15 minutes.
- 6. Let them cool briefly, sprinkle with brown sugar, add a little more olive oil and serve with a scoop of ice cream.
Tip: Instead of vanilla, try lavender or honey for an extra Mediterranean touch.
