If you want to make something that everyone will be talking about - then don't turn on the oven, just use your imagination. This no-bake cake is light, creamy and aromatic - and will leave even those who don't like sweets speechless.
Ingredients
The substrate:
- 450 g of ground biscuits
- 180 g butter (melted)
- 2–3 tablespoons of milk
- (optional) 1 tablespoon light brown sugar
Cream:
- 500 g of fresh cheese
- 500 g of mascarpone cheese
- 2 spoons of powdered sugar
- 1 dl sweet sour cream
- 25 g powdered gelatin
- 3 limes (grated zest and juice)
- a handful of fresh mint
- 180 g of crystal sugar
- 1 dl of water
- 6 tablespoons white rum
Decoration:
- 250 ml of sweet cream
- 1 whipping cream
- 1 vanilla sugar
- 1 lime (sliced into thin slices)
- fresh mint leaves
- straws for decoration (optional)
Preparation
Mix the crushed biscuits with melted butter, milk and (if desired) brown sugar. Press the mixture into a 26 cm springform pan and place in the fridge to set while you prepare the cream.

Sirup s rumom and limetom
Pour water and granulated sugar into a saucepan, then heat until the sugar is completely dissolved. Cook for another 2–3 minutes. Then add the grated lime zest and juice, finely chopped mint and rum. Stir and let stand for 10–15 minutes. Strain.
Cream
Beat the cream cheese, mascarpone, powdered sugar and heavy cream. While mixing continuously, slowly add the strained syrup until the mixture is combined.
Gelatin
Add 25–12 tablespoons of cold water to 13 g of gelatin. Leave for 10 minutes to swell. Then heat gently until the gelatin dissolves (do not boil!). Stir 2–3 tablespoons of cream cheese into the gelatin, then combine everything with the rest of the cream.
Agreement
Pour the cream over the base and leave the cake in the refrigerator for at least 4 hours (preferably overnight) to set.
Decoration
Whip the cream with whipping cream and vanilla sugar. Decorate the cake with lime, mint leaves and, if desired, straws – for a real mojito effect.

Tip:
If you don't want to use alcohol, you can omit the rum or replace it with rum flavoring.
