Ingredients (for 2 people):
- 1 cup quinoa – cooked and cooled0
- 1 large fresh cucumber – chopped
- 10 cherry tomatoes – halved
- 1/2 red pepper – diced
- 100 g feta cheese – crumbled
- 1 handful of fresh parsley or basil – finely chopped
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
<strong>Preparation: </strong>
Wash the quinoa, cook it (about 15 minutes), drain it and let it cool.
In a large bowl, combine the cooled quinoa, vegetables, feta cheese, and herbs.
Pour over lemon juice and olive oil, season with salt and pepper.
Mix well and serve chilled.
