If you want to prepare something quick, baked, stuffed, light or creamy - zucchini is the right choice.
Here are a few recipes for how to prepare this vegetable.
Oven-baked zucchini with parmesan and garlic
Ideal for a side dish or a light dinner.
ingredients:
2–3 zucchini
olive oil
garlic (2 cloves, finely chopped)
salt, pepper
parmesan (or homemade cheese)
dried oregano or thyme
<strong>Preparation: </strong>
Cut the zucchini into rings or long strips.
Arrange them on a baking sheet, sprinkle with olive oil, add garlic and spices.
Finally, sprinkle with parmesan.
Bake for 15 to 20 minutes at 200°C until golden brown.
Stuffed zucchini (classic or vegetarian)
Excellent as a main course too.
Ingredients (classic version):
zucchini halved lengthwise, hollowed out
minced meat (or soy for a vegan version)
onion, garlic
p0aradajz plate
salt, pepper, spices as desired
grated cheese for gratin
<strong>Preparation: </strong>
Hollow out the middle of the zucchini and boil them briefly (2–3 min) to soften.
Fry the onion and garlic in a pan, then add the meat and tomatoes.
Add some sauce to the stuffed zucchini and sprinkle with cheese.
Bake in the oven for 20 minutes at 180–200°C.
Stuffed zucchini
A quick classic, especially for summer.
ingredients:
zucchini cut into rings
salt, pepper
flour, eggs, breadcrumbs
oil for frying
<strong>Preparation: </strong>
Salt the zucchini and leave them for 10 to 15 minutes to release the water.
Place them in flour, then egg, then breadcrumbs.
Fry until golden brown.
Serve with yogurt or white sauce.
Zucchini soup with sour cream and dill
Delicate, creamy and light – great as an appetizer.
ingredients:
zucchini (grated or sliced)
onion
olive oil
salt, pepper
cooking cream or sour cream
fresh or dried dill
<strong>Preparation: </strong>
Fry the onion in a little oil, then add the zucchini.
Simmer, occasionally adding water or stock.
Finally, add sour cream and dill, and blend with a hand blender if desired.
Sweet zucchini and cocoa cake
Zucchini gives juiciness, but it is not felt.
ingredients:
2 cups grated zucchini (well drained)
1,5 cup flour
half a cup of cocoa
1 cup of sugar
half a cup of oil
2 eggs
1 teaspoon of baking powder
vanilla, a pinch of salt
<strong>Preparation: </strong>
Beat the eggs and sugar, add the other ingredients, and finally the zucchini.
Bake for 30 to 35 minutes at 180°C.
Optional: chocolate glaze over.
