It's simple, quick to make, and the result is a soft, fragrant, and moist cake that goes equally well with morning coffee as it does with afternoon tea.

- 250 g flour
- 1 teaspoon of baking soda
- 1 teaspoon of salt
- half a teaspoon of ground cinnamon
- 150 g brown sugar
- 100 g butter (room temperature)
- 2 eggs
- 2–3 mashed ripe bananas
- 1 teaspoon vanilla extract
Preparation
Preheat the oven to 180 degrees. Line a baking dish of your choice with baking paper.
In one bowl, mix the dry ingredients: flour, baking soda, salt, and cinnamon.
In another bowl, beat the brown sugar and softened butter until well combined.
Add the eggs one at a time, beating well each time, then add the mashed bananas and vanilla extract.
Gradually add the dry ingredients to the wet mixture and mix by hand (just enough to combine - do not overmix).
Pour the mixture into the prepared pan, level it and bake for about 45 minutes, or until a toothpick inserted into the center comes out clean.
Cool the bread in the pan for about 20 minutes, then transfer it to a wire rack to cool completely before slicing.

For the best flavor, use the ripest bananas possible - those with dark spots will provide the most sweetness and flavor. If the bananas are not ripe enough, you can put them in the oven at a low temperature until they darken and soften.
