Ingredients (for 1 person):
- 2 eggs
- a handful of fresh spinach (or Swiss chard)
- 3–4 cherry tomatoes (or half a regular one)
- salt and pepper
- 1 teaspoon olive oil (or a little butter)
- optional: 1 tablespoon of crumbled feta cheese
<strong>Preparation: </strong>
In a bowl, whisk the eggs with a pinch of salt and pepper. Put oil in a frying pan and briefly fry the spinach over medium heat for 30–60 seconds, just until it “softens”.
Add the halved cherry tomatoes and stir for another 20 to 30 seconds.
Pour over the beaten eggs, reduce the heat and bake for 2 to 3 minutes until the edges are set.
If desired, add cottage cheese/feta, fold the omelette over and leave for another minute to combine.
You can serve with cucumber and/or tomato on the side with a slice of whole wheat bread.
