One of those treats that always leaves an impression, and is quick, easy, and relatively inexpensive to make, is the combination of cold vanilla ice cream and warm homemade cherry sauce. The contrast of temperatures and flavors transforms simple ingredients into a treat that looks like it came from a fine restaurant.
As the scoop of ice cream slowly melts under the hot cherry topping, the scents of vanilla and fruit are released that awaken all the senses. The sweetness of the ice cream is perfectly complemented by the slight tartness of the cherries, making each bite both refreshing and rich in flavor.

Recipe for cherry sauce
ingredients:
300 g cherries (fresh or frozen) 2 dl water or cherry juice 2 to 3 tablespoons sugar (to taste) 1 tablespoon cornstarch 1 sachet vanilla sugar
<strong>Preparation: </strong>
Place the cherries, water (or cherry juice), sugar and vanilla sugar in a saucepan. Cook over medium heat for about 10 minutes, until the cherries soften and release their juice. Blend the syrup with a little cold water to obtain a smooth mixture without lumps. While stirring continuously, pour the blended syrup into the cherries. Cook for another one to two minutes, until the sauce thickens to the desired consistency. Remove from heat and leave to cool for a few minutes.
To serve:
Place one to two scoops of vanilla ice cream in a bowl or glass, pour over warm cherry sauce and garnish with a fresh mint leaf.
